Where there's a will there's a way. One of my favourite Instagram accounts (@slowdownfarmstead ) said in a recent post that some things were "better than easy" I love this. I used to try and convince myself and others that cooking for yourself was easy and shopping local was always a lovely stroll to the market that everyone should want in their life. Sometimes it is but often, cooking for yourself every night even when you reaallly don't want to is a struggle. Shopping sustainably takes work. Long drives, reasearch, phone calls, sorting out group purchases and processing your bulk orders are all time consuming, sore feet, sore back kind of work. Today I bought a 12k brick of organic butter and broke it down into 1lb packages. I have another case coming next week. About 6 of us are splitting it all. My hands have a slightly sour butter smell, my freezer is full and my breakfast is waiting to be slathered in this tomorrow morning. Definitely "better than easy."
I've been getting pretty extreme about my bone saving these days. It's amazing how much meat, fat and overall goodness appears after boiling them for a few hours. Reduce your waste and your grocery bill! I wrote a little blog about my chicken wing broth-check it out!
