I often go to make something only to realize that I am missing half of the ingredients. The World Wide Web has been a kind resource to this haphazard soul of mine and I am here to share all the successes and failures I have had with eggless baking days.
Mashed banana: A good way to use old bananas on the counter, without making banana bread. The physical results are good, but there will always be a hint of banana flavour in the end product.
1 mashed banana = 1 egg
You must mash the banana to a liquidly goopy state before adding into recipe.
Baking Soda and Vinegar: I have previously mentioned that this was a good replacement for baking powder, but in desperate times I have also used it for an egg substitute. If I am out of both baking powder and egg I will use both a mashed banana and this concoction.
1 tsp baking soda to 2 tsp vinegar. Stir, add.
Flax meal: I learned this one from vegan cooks. I rarely have flax meal floating around my pantry, but if you are a smoothie fiend you might find some in your cupboard. The meal, mixed with water, offers a nutritious egg replacement in recipes.
I find myself using pancakes as an example of why it’s important to have basic ingredients on hand quite regularly. Pancakes are clearly one of my main food groups so I thought I would share my basic pancake recipe with you.
Tip: If you have more than 2 people, recipes are easily doubled and divided. Adjust your recipe accordingly.
1 egg (or replacement)
1 cup of milk
1 tsp of vanilla (optional)
1 tblsp oil
1 tblsp sugar
1 cup flour
2 tsp baking powder OR 1 tsp baking soda, and 1 tsp vinegar.
Optional: Cut up fresh or frozen fruit. Cinnamon. Grated apple/pear. Add any or all options to batter.
Add milk, vanilla, oil, sugar. Mix thoroughly.
If using vinegar, add vinegar.
Pour in flour, sprinkle baking powder or baking soda on top evenly.
Stir in slowly. Mix thoroughly but don’t over beat.
Heat frying pan. Add oil (I use butter).
Pour batter in your preferred pancake size.
Wait until it bubbles, and all bubbles have popped.
Tip: If adding fruit, you can either mix it into the batter or sprinkle it directly onto the pancake in the pan, prior to flipping them.
Once bubbles have popped, flip and cook until both sides are golden brown.
Serve with whatever toppings your hungry bellies desire.
